This is the “wow” sauce
Spices used: All of them — especially saffron, turmeric, smoked paprika & Kashmiri
Ingredients:
- 4 tbsp butter or ghee
- 1 generous pinch saffron threads (soaked in 1 tbsp hot water)
- 1 tsp turmeric
- ½ tsp Kashmiri chilli powder
- ½ tsp smoked paprika
- ½ tsp rainbow peppercorns (freshly cracked)
- 2 cloves garlic, minced
- Splash of cream or coconut milk
- Lemon zest + fresh herbs
Method: Melt butter, bloom all the spices for 30–45 seconds until fragrant (don’t burn them!). Add garlic, then cream. Simmer 2 minutes. Finish with lemon zest.
Drizzle over:
- Grilled prawns or salmon
- Pan-seared lamb chops
- Roasted cauliflower or carrots
This sauce is stupidly good — rich, aromatic, slightly smoky, floral from the saffron, and beautifully golden.
