Luxe Saffron Turmeric Butter Sauce (for seafood, lamb, or roasted vegetables)

This is the “wow” sauce

Spices used: All of them — especially saffron, turmeric, smoked paprika & Kashmiri

Ingredients:

  • 4 tbsp butter or ghee
  • 1 generous pinch saffron threads (soaked in 1 tbsp hot water)
  • 1 tsp turmeric
  • ½ tsp Kashmiri chilli powder
  • ½ tsp smoked paprika
  • ½ tsp rainbow peppercorns (freshly cracked)
  • 2 cloves garlic, minced
  • Splash of cream or coconut milk
  • Lemon zest + fresh herbs

Method: Melt butter, bloom all the spices for 30–45 seconds until fragrant (don’t burn them!). Add garlic, then cream. Simmer 2 minutes. Finish with lemon zest.

Drizzle over:

  • Grilled prawns or salmon
  • Pan-seared lamb chops
  • Roasted cauliflower or carrots

This sauce is stupidly good — rich, aromatic, slightly smoky, floral from the saffron, and beautifully golden.
